Result description
This project has produced a Behavioral blueprint for the savory bread and spread categories across Belgium, Germany, and the Netherlands. By mapping the real-world consumption habits of 1,427 participants using AI-driven natural language processing, we have identified the specific “permission spaces” where health and sustainability can successfully integrate into traditional daily rituals.
Key Deliverables:
- The six dominant food mindset framework: Maps how consumers balance health and sustainability.
- Regional ritual mapping: Detailed insights into how bread and spread usage differs across the three target markets, identifying unique opportunities for localized product positioning.
- Strategic innovation roadmap: Evidence-based guidance for B2B suppliers and SMEs to de-risk the introduction of sustainable ingredients into high-frequency staple foods.
Utility for the value chain: This result provides the market intelligence necessary to transition from “commodity-led” to “mindset-led” product development. It empowers ingredient suppliers to refine their value propositions and helps food brands create healthier offerings that align with the authentic, lived realities of European consumers.
